This would be a pretty straightforward mod. By default card content is stored as HTML, so you would presumably use a gem that can convert HTML to markdown.

It would also be pretty straightforward to create a Markdown cardtype where you actually store the content as markdown and then render it as HTML. It think there is an existing ticket (or idea?) discussing that possibility. That too would be a mod.
